Karma Bhotia, owner and head chef of the Himalayan Kitchen, was born and raised in the remote Mt. Makalu region of northeast Nepal. While traveling and photographing the Himalayas, Bhotia learned the nuances of Himalayan cooking; a cuisine that utilizes black and white cardamom, jimbu, garlic, ginger, cumin, coriander, star anis, timboor, chili, turmeric, saffron, sesame and mustard seed… not all at once of course. However he is an expert in arranging spices to create unique flavors that are sure to suit any appetite.  Gam and Dambar, both part of the great team at Himalayan Kitchen, offer their unique perspectives on curry and tandoori respectively.
